Graham Avocado Cookies

Long time ago, my Aunt learned how to bake in the States. Then, when she found a good job. She decided to send all her baking materials and Baking books here in the Philippines. Since then, if my siblings and cousins have vacant time, or some people just gave us free ingredients, we also bake or even use it for recipes that it doesn't need to be bake. Before. we don't frequently use these materials. But now, I cleaned and organized them because my energy for baking is back again. Happy Baking!
Graham Avocado Cookies
  • Ingredients:

  • 2 cups M.Y. San Grahams-Honey Graham Crackers, crushed
  • 1/2 cup mashed avocado
  • ½ cup sugar
  • 2 eggs
  • ½ cup dark cocoa powder
  • ½ tsp. baking soda
  • 2 tsp. butter

  • Procedures:
    • 1. Preheat oven to 175°C / 350° F.
    • 2. In a bowl using a hand mixer (or make everything in a food processor), mix together avocado,  sugar, 1 egg and butter until smooth. Set aside.
      3. In another bowl, using a hand mixer, mix together M.Y. San Grahams, butter, cocoa powder and baking soda and 1 egg.
    • 4. Using spoon, place dollops of cookie dough in a baking sheet with parchment paper. 5. Make a whole in the center and spoon avocado mixture on it, make sure to flatten them out a bit with the back of the spoon.
    • 6. Bake for 8-10 minutes or until the cookies don't stick as much to the paper as they did before baking.
    • 7. Cool down. Store in an airtight container.
